Your perfect Easter Grilled Leg of Lamb

Easter is just around the corner, and what better way to celebrate than with a BBQ mouthwatering feast? If you’re looking to impress your guests and tantalize your taste buds, grilling a succulent leg of lamb on the BBQ is the perfect choice.

Why Lamb? Lamb is a classic choice for Easter dinner, symbolizing springtime and renewal. Its tender, juicy meat pairs perfectly with a variety of flavors, making it a versatile Grilling option for any occasion.

What you need

  • 7 to 8 pound bone-in leg of lamb
  • ¼ cup finely chopped fresh rosemary
  • ¼ cup finely chopped fresh mint
  • 6 cloves garlic, peeled and finely chopped
  • 1 shallot, peeled and finely chopped
  • ¼ cup extra virgin olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon ground black pepper
  • Zest from 1 large lemon

Prep time

  1. Using a sharp knife, make deep incisions all over the leg of lamb.
  2. Combine the remaining ingredients in a bowl, creating a flavorful paste.
  3. Generously coat the lamb with the herb mixture, ensuring it seeps into the incisions.
  4. Wrap the entire leg of lamb with plastic wrap and refrigerate for 4 hours or overnight.
  5. Take the lamb out of the refrigerator 2 hours before cooking to allow it to reach room temperature.

What to do

  1. Start by preheating your Sahara bbq with all burners set to high. After 15 minutes, turn off the center burners and lower the outer burners to medium heat. (Indirect heat)
  2. Position the lamb at the center of the grill grate and cook it covered until the internal temperature registers 140ºF, typically about 2 hours. The Sahara Digital Thermometer will be useful here.
  3. Once done, carefully remove the lamb from the grill, cover it with foil, and let it rest for 10 minutes before carving and serving.

Let it Rest

Once the Grilled lamb reaches the perfect temperature, resist the urge to slice into it right away. Instead, transfer it to a cutting board and let it rest for at least 10-15 minutes.
