Chicken Skewers With Vegetables

What better way to enjoy the warm weather than with some delicious chicken and mixed vegetables skewers? Using my trusty Sahara BBQ, I created a simple yet flavourful dish that’s perfect for any outdoor gathering. These skewers are a breeze to prepare, cook evenly, and bring out the best in both the chicken and the veggies. Here’s how I did it.

What you need:

  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 Courgette
  • 1 red onion
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

What to do:

  • If using wooden skewers begin by soaking them in water for at least 30 minutes to prevent them from burning on the grill.
  • Cut the chicken breasts into 1-inch cubes.
  • Chop the bell peppers, zucchini, and red onion into bite-sized pieces.

**Marinade:**

  • In a large bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, dried oregano, salt, and pepper.
  • Add the chicken cubes to the marinade, ensuring they are well-coated. Let the chicken marinate for at least 30 minutes to absorb the flavours.

**Assemble the Skewers:**

  • Once marinated, thread the chicken, bell peppers, zucchini, red onion, and cherry tomatoes onto the skewers. Alternate between chicken and vegetables for a colourful and balanced skewer.

**Grilling:**

  • Preheat the Sahara BBQ to medium-high heat. Oil the grill grates lightly to prevent sticking.
  • Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally to ensure even cooking. The chicken should be cooked through and have a nice char, while the vegetables should be tender.

**Serving:**

  • Remove the skewers from the grill and let them rest for a couple of minutes.
  • Serve the skewers hot, directly from the grill. They pair wonderfully with a fresh salad or a side of grilled or boiled baby potatoes.

 

The marinade infused the chicken with a burst of flavour, while the high heat of the grill perfectly charred the vegetables, enhancing their natural sweetness. This simple yet satisfying dish is sure to be a hit at your next BBQ. Enjoy the taste of summer with every bite!
