Sahara Chimichurri Prawns (2 ways)

You can skewer the prawns and then add the mixture as they are being cooked on your gas BBQ or you can grill the prawns on the Sahara Griddle Pan and add the mixture at the end!

  • 1 lb of large prawns
  • 3 chopped cloves of garlic
  • 1 medium red onion chopped
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • ½ cup of flat leaf parsley
  • ½ cup fresh basil leaves
  • ¼ cup coriander leaves
  • ¼ cup olive oil
  • ½ tsp ground coriander
  • Salt to taste


Quickly chop the garlic and parsley and add the red wine, vinegar and lemon juice and leave for 1 min to combine.

In a food processor, add the coriander leaves, ground coriander, salt, basil and parsley and give a quick pulse. Then add in the lemon juice mixture.

While the machine is on a low setting, gradually add in the oil. The mixture should be slightly chunky so try not to chop too finely.

This tasty mixture can be brushed onto the skewed prawns while cooking on the gas bbq grill. You can also leave the rest of the mixture on the serving table for people to add to their food – it wont last long!


If using the Griddle Pan, quickly cook off the prawns for about 1 minute on both sides and then add some of the mixture to the griddle.

This tasty mixture is pretty much amazing with all types of meat so don’t be afraid to try it with them!
