If you haven’t bitten into a sweet, juicy Grilled Corn on the Cob, with the sauce dripping down your chin, did summer even really happen?
Corn on the cob is delicious just tossed on a hot grill and slathered with butter. Even better is to slather it in chilli lime sauce – it’s a really easy way to give basic grilled corn an upgrade.
Ingredients
- 4 whole corn on the cobs, leaves removed
- 1/2 cup sweet chili sauce
- 1 tablespoon sriracha
- 2/3 tablespoons butter (melted)
- 1 clove garlic, finely diced
- Juice of 2 limes
- Freshly chopped coriander for garnish
- 1 red chili, finely sliced, for garnish
- Salt and pepper to taste
Method
The chili lime sauce!
Combine chili sauce, butter, Sriracha, garlic, red pepper flakes, and lime juice in a medium bowl and season with salt and pepper to taste.
Clean the BBQ with the Sahara grill brush.
Heat your gas grill to medium high.
Grill the corn, turning every 2 minutes while basting with a bit of chili lime sauce from time to time, until tender and charred for 10 to 15 minutes.
Remove from the grill and season grilled corn with more of the chili lime sauce. Garnish with coriander, chili slices and serve immediately, enjoy!
If you’re the same as me, you’ll go crazy over this chilli lime corn on the cob with the homemade chili lime butter.
I highly recommend buying fresh corn on the cob, because the flavor and texture will be a lot better than frozen corn for this recipe. While I do suggest fresh, frozen will work too if that’s all you have to work with.
Don’t forget plenty of fresh lime slices to add additional flavor when you are serving! Delish…
