- To make the hassleback potatoes on your gas bbq.Firstly, prep the potatoes. One at a time, put the potatoes onto a wooden spoon and, starting at one end, cut across their width at 3mm intervals with a sharp knife (the spoon will stop you from cutting all the way through the potato).
- Once all the potatoes are prepped, turn on all the grills onto high and close the hood. Tip the potatoes into the griddle pan (or a roasting tin) and season well with a good olive oil, butter, salt & pepper and give the potatoes a good shake so that they’re coated well. Don’t be afraid to add more oil and butter to taste.
- Place the griddle pan into the centre of the gas BBQ and turn off the grills directly underneath the tin (indirect heat) for 45 mins-1 hr until golden and tender.These are also tasty with mixed herbs, chilli flakes or melted cheese!!!!
