Kabobs are one of my favourite grilling options. I make these grilled chicken kabobs constantly during the summer months, they’re a perfect combination of tender marinated chicken with a variety of veggies.
If you like, you can use thigh meat if preferred but chicken breasts work really well when marinated this way because they are tenderised with the coconut milk. This means the chicken breasts can take that burst of high-cooking-heat much better than if they weren’t marinated so it won’t dry out.
A little TIP!! If you’re using wooden skewers for your grilled chicken satay, soak the wooden skewers in water for an hour beforehand, so they’re less likely to burn on the grill. I use our Sahara Stainless Steel Skewers so I don’t have to worry about this happening.
Kebobs are a great way to get kids cooking as they are fun to make together – get them involved in building their own and they’ll go down a storm. Mix them up with veg or pineapple (delish) it’s an easy way to get the good stuff into them.
