Ingredients
- 8 Mini Peppers, seeded and sliced in half
- Olive oil for brushing peppers
Goat Cheese Filling:
- 6 ounces goat cheese
- 6 ounces light cream cheese
- 2 tspn minced garlic
- 2 tspn fresh chives, finely chopped
- 2 tbsp fresh parsley, finely chopped
- 1/2 tablespoon fresh lemon juice
- salt and pepper to taste
Method
To make the peppers:
Clean the gas BBQ grill with the Sahara grill brush.
Preheat gas grill to medium high heat.
Brush skins of peppers with olive oil.
Grill peppers over medium high heat for 5-6 minutes or until skin is slightly blistered.
Remove from grill.
To make the filling:
Mix the cheeses and herbs together until light and fluffy.
Then, mix in the lemon juice and season to taste with salt and pepper.
Using a spoon, fill the grilled peppers!
That’s it!
Serve immediately.
